Our Fishing Resort is looking for a Sous-Chef for this coming Fishing season. We are looking for someone who will commit to multiple seasons with us. Under the direction of the Executive Chef, the Sous Chef will help oversee all food preparation, ensure maximum productivity and the highest level of quality and presentation of all meals coming out of our kitchens.
This role will ensure that specific sections of the kitchen are organized and prepared for the morning, lunch, and dinner time services. The Sous Chef will also be responsible for leading the team in the Chef's absence as well as friendly customer service.
Reporting to the Executive Chef, responsibilities and essential job functions include but are not limited to the following:
-Responsible for the kitchen department in the absence of the Executive Chef.
-Responsible for accurate ordering, according to business levels.
-Sous chef is expected to be in line function for +- 90% of his work days.
-Ensure all orders are executed in a timely manner, paying attention to ordering times while also focusing on the highest quality of work and detail.
-Ensuring fridges, freezers and work area are left in a tidy and organized manner.
-Train and educate colleagues on high standards and culinary techniques.
-Work closely with colleagues to ensure the high quality and consistency of food preparation and presentation.
-Coach and mentor colleagues.
-The Sous-Chef is responsible for open communication between BOH and FOH, responsive to concerns and suggestions.
-Develop and implement initiatives to improve service by streamlining procedures and removing obstacles that hinder service delivery.
-Utilize effective problem-solving and abilities to resolve any issues with associates or suppliers.
-A minimum of 5 years of culinary experience in a fast-paced, high volume and professional culinary environment.
-A minimum of 2 years in a leadership culinary role.
-Ability to work, 6 days a week, standing for 10-hour shifts, and overtime as required.
-Ability to lift 25 kg.
-Strong knowledge of back of house operations.
-Ability to work well under pressure in a fast-paced environment.
-Passionate about food - you're always looking for new ideas to incorporate into the dishes.
-Strong principals in regard to proper cooking techniques.
-Excellent problem-solving skills.
-Customer Service comes naturally to you, you are engaging and can't help but make friends with people.
-Present a professional image and the ability to communicate clearly with both customers and co-workers.
-Able to juggle multiple tasks at a time while prioritizing the most important.
-Organized with excellent attention to detail.
-Graduation from a recognized culinary program or Red seal certification is an asset.
Flights to and from the Lodge, room, and board are taken care of.

Compensation for the position will be based on experience. We are offering a competitive wage and an excellent shared tip pool.
